I’ve been to Maui and the Big Island, and both times we stayed at a Bed & Breakfast. There are a ton of vacation rentals in the area so that is a cheaper alternative. You don’t get the daily maid service, but you can play house and eat in some days because most rentals come with a kitchen.

Also check the local area Craigslist.

Everyone I have spoken to has stayed at The Hyatt in Kauai and said it wa AMAZING!  We are staying there for 3 nights and then staying in the Northern part of the island for 3 nights at the St. Regis.

On the Big Island, we stayed at The Four Season Hualalai and also Mauna Lani Bay Hotel, which was up the coast from the Four Seasons about 20 minutes.  The Four Seasons was AMAZING and probably not the place the stay if you’re looking for something cheaper! But the Mauna Lani was a bit more price friendly and still fairly luxurious and pretty.  Also check out the Hilton in Waikoloa Village.  The Hilton looked to have been built more recently and had more restaurants and activities than the Mauna Lani.

I agree with lauren810c about the Hyatt on Kauai & the St. Regis!  On the Big Island, you might want to also check the Marriott Waikoloa Beach, in addition to the Hilton Waikoloa.
