Ok, since it’s the first of the year, many of us are trying to refine our eating habits. And this is especially true with us girls that are TTC. I thought maybe we could use this post for ideas and recipes for when we’re struggling to come up with menus 🙂 I do, or try to do, our menu on Thurs. or Fri. for the upcoming week so I can grocery shop over the weekend. Anyone want to help me with ideas and recipes? Please say yes! 🙂 What is it that you and your husband love to eat?

I’m really interested in seeing the recipes that people share, I got some really good ones from the thread septcabride posted last week! Here are some of my recent discoveries 🙂
Mexican chicken lime soup
This one is more of a snack (one of my favorites)…Roasted Chickpeas
Lemon Baked Cod
Sweet Potato Skins
Stuffed Zucchini Boats

Those are good ideas! Another thing I struggle with it what to bring for lunch. It seems like everything that would be ‘easy’ to bring for lunch has so many preservatives in it! I’m thinking of starting a sort of bento lunch, might be easier!
I think I’m going to make some lettuce wrap turkey tacos next week – we love mexican food!

@ecomaha: We love mexican food too! I usually bring leftovers from the night before for lunch but some other things that I bring are lettuce wraps (a sandwich, just wrapped in lettuce instead of bread since I don’t eat gluten), soups (usually homemade leftover ones) and the good old salads lol.

My favorite easy lunch to bring to work is:
half a can of black beans (drained and rinsed) – mash them up a bit if you want
cumin (about 1/4 tsp)
dash of chili powder
then to that you can add whatever you want. most of the time I put salsa and 1/2 of a diced avocado in it. I just eat that and an apple, cut up veggies, or string cheese and I am good to go.

@babymakes3: and actually, everyone: Be careful with canned foods. Most cans contain BPA! I was shocked to learn this. 😛

@babymakes3: I took your idea with the beans today. I’ve been trying to find a good way to get more beans in my diet anyway and since my husband doesn’t like them it’s hard!! I forgot to put the spices in but i put in a couple TBSP of salsa for some flavor. Thanks for the idea!
Tonight I’m making this for dinner. I’ve made it before and it’s really quick and easy for a Monday night. I want to make my own taco seasoning to use but not sure I’ll have time tonight. I did Pin a recipe so I’m ready 🙂
