For low carb I make omelettes in muffin tins. I was worried that reheating refrigerated eggs would be gross, but they are actually really good if reheated with low power.

here my every day go to breakfasts… low carb:

egg in ham http://ohsnapletseat.com/2013/01/14/a-paleo-breakfast-baked-eggs-in-ham-cups/ I usually add vegies (mostly spinach) to it to get my veggie kick. I like mine cold as well, but maybe you can just microwave yours in the morning?

 

not low carb but fitting my macros

cinamon cake http://www.runningtothekitchen.com/high-protein-cinnamon-cake-bars/ my go to recipe. make it on Sunday and have it during the week with a nice cup of coffee

smoothies. add a scoop of protein to make it high protein

poridge. same thing… add some protein with protein powder or eggwhites

mus1ca1xo :  girl, i’ve got you on this one. i pack dh breakfast every day and we eat mostly primal. his favorites: 

1. Browned Sausage & Scrambled Eggs (trick: i make the onion and browned sausage at the beginning of the week. then each night i take a few spoonfulls and add it in a pan with scrambled eggs. i toss it in a pyrex and dh takes it to breakfast the following morning. he heats it up in the microwave or eats it cold. i use the same method for all of these)

2. Egg Cups & Fruit (i bake eggs in a greased muffin tin and let them cool, i pack him 3 eggs and slice up a piece of fruit, so easy)

3. Cheesy Eggs with Mushrooms: (grated cheese, sauted mushrooms, and scrambled eggs) 

4. Egg Potato Hash (scrambled eggs mixed with fried potatoes and onions and a little ketchup)

5. Bacon & Egg Bowl (chopped crispy bacon & eggs) 

6. Frittata (veggies & eggs! i like spinach & sundried tomatoes) 

7. Primal Granola Bowl (usually i’ll slice two big pieces of fruit and it to homemade “primal” granola. it’s just dark chocolate chips, cashews, dried cranberries, sunflower seeds, pumpkin seeds, and peanuts. dh LOVES it, he was a big cereal guy before we went lower refined carb. this is kind of a treat breakfast, lol) 

8. Hard Boiled Eggs & Sliced Sausage (this is good if you don’t want to cook breakfast every night. just buy some pre-cooked sausage, a good brand, and hard boil some eggs in advance. dh takes 3 eggs and 1 sliced sausage, i don’t even brown it in a pan.) 

You can also get creative and eat non-breakfast foods for breakfast. dh doesn’t like this so much but i actually love it. this morning i had thai curry soup!

mus1ca1xo :  Sorry to hijack but I’m a bit of an egg muffin afficionado too! I stick them in the microwave for 30 seconds to reheat.

I also do a big frittata with feta, cherry tomatoes and torn spinach then have a slice each morning for breakfast. Bang it in the microwave for a minute and the feta goes lovely and soft. Mmmm.

I do those egg muffins too. I usually reheat in the toaster oven but if I take them to work they are good in the microwave. Just keep an eye on them bc they get rubbery if you microwave them for too long.
