@badabing88:  I don’t know if you’d want soup now that it’s starting to warm up, but my fiance and I love this:

I made it back in January when my mom was in town visiting, and she loved it as well.  It’s incredibly easy and makes quite a bit for leftovers, which is always nice.

We do a really good stir fry that’s basically garlic, onions, ginger, sesame oil, chicken, and vegetables. You could add rice if you wanted, but we don’t. The key to healthy cooking (IMO) is using a lot of herbs, spices, etc to make ordinary meat and vegetables taste good. We also make a vegetable soup with whatever vegetables we have, chicken broth, garlic, onions, cream or milk, and cheese–we go much easier on cheese and cream than most recipes call for.

Also to make chicken more interesting, we make a whole chicken in the oven and serve with herb butter. I saw a recipe in a magazine a while back for it and you just mix some butter with chives or whatever spices you like and it makes a big difference. We also make homemade ranch with herbs and Greek yogurt and that makes vegetables a lot more tasty.

@badabing88:  no prob! Sorry I don’t have many recipes–we just kind of “Amelia bedlia” most things. Another good thing we do is make fettuccine alfredo and either eliminate noodles and just use steamed vegetables in place of noodles (broccoli, zucchini, carrots, etc), or use brown rice pasta and vegetables more like 50/50.

I’ve been doing Weight Watchers so I’ve been looking for healthy but delicious dinner ideas. My Fiance and I have a soup recipe that we LOVE, and it’s only 2 WW points plus. It’s taco soup and super easy to make! It takes:

 

1 pound of ground turkey

1 onion

1 can of corn

1 can of black beans

1 can of chili beans

1 can of diced tomatoes

1 can of diced tomatoes with green chiles

1 packet of taco seasoning

1 packet of Hidden Valley ranch seasoning

 

Just brown the turkey with the onion. Add all of the cans of veggies (don’t drain). And we also usually add a can’s worth of water. Simmer for an hour on the stovetop.

It’s SO flavorful and delicious and makes a lot, so there will be plenty of leftovers for later in the week.
