I don’t think that you get to tell caterer’s how many of each you want to order, you give them a head count, they multiply that by what they charge per person. If you are trying to be budget conscious though you really don’t need TWO types of chicken. The carving station, one chicken, and the sides are enough. 35.00 per head is pretty… average I’d say. 

If you have 40 people you’d be looking at 1390.
