I need help in determining how much food to order for about 40 people for a buffet style reception. I don’t want to order too much food but I of course want there to be enough! I need to figure out how much to order from each section below.
I just don’t know how much to order to satisfy 40 people? I will have a cocktail hour before with an open bar and just fruit & cheese so I know people will be hungry!
**I am informing the caterer of the number of people but I just don’t want them to come back with an overpriced estimate Usually there is always sooo much food left over at the end of the reception. And I am trying to be budget conscious which is another reason why I don’t to order too much food. Ordering 40 of each item seem like way too much food unless that’s how a buffet order is suppose to work..waiting on answer from caterer. Perhaps I should just do a sit down dinner.

Tri-colored cheese tortellini with tomato basil cream sauce $6.95
Chicken Marsala $7.95
Chicken Parmigiana $7.95
