I need your help, Hive! Things are falling into place & it looks like Darling Husband & I may be able to go to an awesome house right on the beach next week – Thursday through Sunday!
It’s a house with a fully funcitonal kitchen so, we can eat some meals there. This is great because I’d like to cut costs down a bit and, honestly, I get sick of eating out if I do it 3 meals a day! Of course we’ll still enjoy some meals out – just not all of them! I’m going to bring a cooler down with some food so we don’t have to make a trip to the store when we’re there. I’ll bring basic breakfast stuff which will be simple. My thought is to bring something to make for dinner Friday night and we can have leftovers for lunch on Saturday. But, I’m stuck on what to make…
I’d like it to either be something simple to prepare or something I can ahead of time (a casserole?) and bake while we’re there. I had thought of baked spaghetti but I’d love other suggestions.
Come on ladies, I know we have some great cooks in this hive! What are your ideas?

Lasagna can be kept cold and reheats well. Chicken enchiladas, pasta salad with grilled chicken or shrimp, pasta salad with pesto and grilled shrimp, etc.

Hmmm… lasagna or chicken enchiladas are great ideas! I’ll probably stay away from pasta salads as I’d like to do something hot. Thanks for your input! 🙂

will you have a grill? There’s lot of good stuff you could grill, which means less dishes (woohoo!), and you can sit in the sand while it cooks….

I like @Lindsay12.31.2010’s suggestion of pesto pasta. Make the pasta/pesto the night before, refrigerate overnight and then you would just have to make some sort of meat to go along with it when you get to the house (salmon is good, but steak or chicken works well too, or something else if you are vegetarian).
Soup and salad? Either homemade soup (frozen and reheated), or store bought soup. Some crusty bread and a big green salad.
Baked stuffed shells could be good too – they freeze and reheat well.

If you actually plan on “hanging out on the beach” a lot… the sun and water and everything will take a LOT out of you. Pasta and grill stuff!
