So all of the vegetarians coming to our wedding also eat fish so I am considering scrapping the lasange. Without the lasange what would you go with? Salmon?

You know your guests best but generally it’s always a good idea to have 1 red, 1 white, 1 fish/seafood and 1 vegetarian.
So either beef or lamb, chicken, salmon or market fish and the lasagne.

I second PP who said to have a white, red, fish, and veggie option. I would go with the beef or lamb for the red meat, the paprika chicken for the white, the Cajun style market fish medallion (as both salmon and saffron can be divisive), and the veggie lasagna.
As for your vegetarian guests eating fish (which means they’re pescatarian and not vegetarian BTW): well in that case that’s awesome, they get 2 choices and the meat eaters still get 4. I find it a bit bizarre to reduce their options to one to provide another meat option when the meat eaters get 4 choices whichever way you cut it.

jessiebear85 : I love the selections you have so far- and definitely the lasagna if you have vegetarians- and lots of non-vegetarians will also love this.
Personally, I love seafood but I do agree there’s lots of seafood in your cold selections, so I’d go with the lamb or pork for your fourth selection, depending on which you think would be more popular with your guests.

Medallions of beef (or the lamb if the mushrooms are a big issue for your fiance)
Chicken with smoked paprika cream (not the one with shrimp–I know so many people allergic to shellfish and you already have enough seafood in your cold menu)
Cumin pork with pumpkin apple sauce
