Help me choose my buffet options

jessiebear85 :  For me it’d be the beef with middle eastern spices, the lamb, veggie lasagna and for the fourth I guess the market fish medallion, just b/c I find the chicken options boring.

it’s going to be a delicious dinner no matter what you choose, I’d guess!

You know your guests best but generally it’s always a good idea to have 1 red, 1 white, 1 fish/seafood and 1 vegetarian.


So either beef or lamb, chicken, salmon or market fish and the lasagne.

I second PP who said to have a white, red, fish, and veggie option. I would go with the beef or lamb for the red meat, the paprika chicken for the white, the Cajun style market fish medallion (as both salmon and saffron can be divisive), and the veggie lasagna.

As for your vegetarian guests eating fish (which means they’re pescatarian and not vegetarian BTW): well in that case that’s awesome, they get 2 choices and the meat eaters still get 4. I find it a bit bizarre to reduce their options to one to provide another meat option when the meat eaters get 4 choices whichever way you cut it.

Grilled vegetable lasagna with fresh herbs and mozzarella

Navarin of chicken and shrimps with caper lemon and dill

jessiebear85 :  I love the selections you have so far- and definitely the lasagna if you have vegetarians- and lots of non-vegetarians will also love this. 

Personally, I love seafood but I do agree there’s lots of seafood in your cold selections, so I’d go with the lamb or pork for your fourth selection, depending on which you think would be more popular with your guests.

Another vote for:

Medallions of beef (or the lamb if the mushrooms are a big issue for your fiance)

Chicken with smoked paprika cream (not the one with shrimp–I know so many people allergic to shellfish and you already have enough seafood in your cold menu)

Cumin pork with pumpkin apple sauce 

Vegetarian lasagna

Do you have a sense of what their best dishes are/what they are known for?  I would probably steer towards that.

I’d go with the slow roasted beef, the mediterranean lamb, the chicken with smoked paprika cream and the veggie lasagne.
