I like roman shades, some have them rolling upwards instead of downwards, that may be a good idea if you have money, then you just have the bottom half covered while the top half is open letting the light in….

I can’t really see your whole couch but it looks beigey to me, that’s what I would go for, so it matches the whole room since it’s open concept.

I would do top down/bottom up shades in a color that blends with the trim of your windows.

I think bamboo would look cool as long as it didn’t make the room too dark since you already have dark cabinets. They would probably be easy to wipe if water got on them too.
