So FI and I have narrowed out cake backer search down to 2 bakers. We’ll call them A and B for simplicity sake. Baker A makes GORGEOUS cakes. Her fondant work is impecable, super thin and smooth with super sharp edges. Her cakes also tasted really good (8.5 on a scale of 1-10). Her cakes were a little pricy ($1200 for 200 servings). But still within our budget especially since we got a GREAT deal with our florist and I compromised and went with smaller arrangements.
Baker B’s cakes were cheaper ($850 for 200 people) and tasted a little better, at least at the tasting (9 out of 10), but the photos we saw their decorations looked a little sloppy. The fondant looked lumpy, very round edges, you could see cake through a lot of places. They just didn’t look nearly as nice.
One thing that’s really pushing me to go with baker A is she explained that all she does is wedding cakes, so our cake will taste a little different from the sample cake as it would be fresh, while the samples are frozen since she can’t just whip up a bunch of cakes for a tasting. I’m thinking the cake will be better fresh.
Baker B on the other hand runs a ‘regular’ bakery and their samples were fresh. However, they said that their cakes would be different from the samples they gave us. For example, the one chocolate mousse cake that I loved was a thin layer of cake, a thick layer of mousse followed by a thin layer of cake. I LOVED the mousse part while the cake part was just meh, which brought them down to a 9. When they do a wedding cake though, they do thicker layers of cake followed by thinner layers of mousse (5 layers of cake with 4 layers of mousse). I’m thinking that the cake will just overpower the mousse and not taste super great, possibly not as good as baker A’s, but I wouldn’t be able to say for sure.
I personally want to go with Baker A because I think the cake will look way better and may taste better. FI just wants to go to with the cheapest option because he doesn’t see the point in spending that much money on cake, even though it’s still well in our budget. I’ve already compromised on a few things (for example, I’m doing a MAJOR compromise on flowers, we’re going with small, simple arrangements when I’d love something bigger) and I don’t really want to compromise on a cake that is for sure not going to look as nice and possibly won’t taste as nice. Am I being unreasonable in wanting to go with a baker though that costs so much more?
