My FI’s sister had a rustic wedding in the Rocky Mounatin National Forest near Grand Lake, CO.

Her Buffet included:

Corn Bread

BBQ Baked Beans

Steak skewers

Pork Loin Skewers

Potato Salad

and BBQ Chicken Breast without the bones

**I would recommend having your protein not have the bone in so your guests can feel comfortable eating with a fork and knife.

I loved the baked beans (I usually dont) and wished that she had mashed potatoes. My top contenders would be baked beans, mashed potatoes and macaroni and cheese.

akm57 :  I would probably pick coleslaw and mashed potatoes. Two delicious dishes!

Also, reading your menu made me very hungry, so kudos on you for chosing great food!

garnobella :  Definitely regional! BBQ pulled pork is a total staple where I am from. You can literally find it everywhere because it is so popular!

akm57 :  I would do the veggie pasta incase you have any vegetarians and creamy cole slaw (I don’t like it but everyone else I know does) or mashed potatoes!

garnobella :  hahaha I had no idea bbq on pulled pork was regional. I just thought everyone did it. Since you mentioned apple sauce, do you put that on the pork?

akm57 :  I personally would love mashed potatoes and mac and cheese but I know many other people would like something a bit lighter so one of those with green beans.

I went to a wedding with Mac and cheese as one of the dishes and it was a big hit! At our wedding we had bbq that had gluten free sauces for our 3 gluten free guests (out of 50 people) and we did baked beans and Mac and cheese. Can you do a tasting? That’s how we narrowed down our sides.
