So, my dad just found out that he has diabetes a couple weeks ago. His birthday is this weekend and I’m usually the on that makes the desserts or cakes for family functions. Does anybody have any diabetes cake or dessert recipes that they’d be willing to share. This is going to be an adjustment for all of us. And I could use all the help I can get when it comes to baking for him. My sister is especially stressed because her father in law has diabetes too, so she’s thinking of her kids’ futures and helping them prevent it already! And I’m thinking of ways that I can be helpful to everyone.
So any recipes? Any tips on how to be helpful to my family?

MrsWoods47: my Future Father-In-Law is also Diabetic I make this and it turned out pretty well! Just remember its all about moderation! my Future Father-In-Law LOVES LOVES LOVES DQ Cherry dips so he has one a year. with thanksgiving this week he will prob splurge on a cannoli or a piece of cheese cake (also a good option cake you can make) but only take half.

MrsWoods47: My grandfather was diabetic. My mom used to make pumpkin pie for him, but used sweetener instead of sugar in the recipe. Moderation is good too.

my Father-In-Law is diabetic. . this is his favorite dessert. We just call it Fluff.
two small boxes Jello instant pistachio pudding (sugar free)
one can crushed pineapple in juice
one can fruit cocktail in juice
one can/jar mandarin oranges in juice
(no sugar added versions of all the fruit if possible)
tub of Cool Whip thawed (I use fat free)
1 cup sour cream (I use light)
drain fruit – keep 1 and 1/2 cups of juice. Mix jello pudding and juice together until dissolved. add sour cream – mix until creamy. fold in fruit. mix until fruit is covered. fold in Cool Whip
my Father-In-Law has tested his sugar after eating this and he’s been fine. I make it for him all the time.
