They might be banana leaves. I am not sure though.

The leaves are actually variegated aspidistra.  Banana leaves are HUGE leaves, and wouldn’t work for bouquets.  Aspidistra, however, are what are in your top picture.  Here are some more pictures of them:

Most flower shops should be able to sell them to you.  They aren’t terribly expensive (we sell them at the shop I work in for $15/bunch, or $1.50/stem).  Best of luck!
