White polyester and white silk look different, so I think you are right about ordering soft white instead.  If you are worried about it being polyester and you want silk for your wedding day (I hear that a polyester gown can get really warm since it doesnt breathe like natural fibers do), you can buy off the rack at a sample sale.  That’s where I got my lace and silk dress for 50% off.  And you take it home that day.  If you have a lot of time until your wedding and you want a new dress, I suggest you look at Jenny Yoo dresses.  They are simple and cost around $1000 and are made of silk.  http://www.jennyyoo.com/wedding_alternatives.html

I say just wait til they all arrive and try it out! I did a similar thing to you and I made tons of changes. What you think you like, you turn out hating and vice versa. Do any of the stores have a return policy?

the first dress i bought was polyester.  it’s a light ivory (more on the white side).  i looked at the tag and it was polyester.  somehow i thought all wedding dresses were silk.  it made me like the dress a little less.  i have since purchased two other dresses in silk.  i can definitely tell a difference between the polyester taffeta and the silk taffeta.  don’t be surprised, many wedding dresses are polyester and still beautiful.  if you have your heart set on silk, be prepared to pay a little more.  my first dress (the polyester one) was $1,000 and the silk ones were all over $3k.
