I’m debating between doing a hot cocoa bar vs. a dessert bar. Our wedding is January 21st in WI…it has been known to be the coldest weekend of the year before.
I have been debating for some time between doing cupcakes or wedding cake. My fiancé doesn’t eat cake and I know a handful of others who don’t either. I had “decided” on doing half cupcakes and half cheese cake slices when it started to sink in how cold it really could be on the wedding day. I thought maybe I should throw in something to keep everyone warm.
I found hot cocoa bars and love the idea of it. But since we are trying to keep the cost low-I was thinking about doing the hot cocoa bar with just the cheese cake slices and éclairs. We of course would have all the extras-marshmallows-candy canes-caramels etc We just wouldn’t have a “cake”
Will people miss the “cake”?
We won’t be completely without a wedding cake though. My fiancé loves the DQ ice cream cake so I am going to surprise him with one of those for “our” cake with a special cake topper.

I LOVE the idea of a hot cocoa bar in the dead of winter! Are you thinking like actual chocolate or instant?

I LOVE the hot cocoa bar idea!! You’ll have cheesecake and eclairs for people that want a more traditional dessert, but I think that sounds amazing!

Can you do your cake cutting with the cheesecake? You could put your cake topper on there?
I love the hot cocoa bar!

You can get really creative with cocoa! Candy canes, biscotti, pirouette cookies, toasted coconut marshmallows, add-your-own flavoring…
Can I come?

Instant. I was thinking about getting a variety of flavors from Land O Lakes –
There’s lots of different options for hot cocoa flavors and cappuccino http://www.cocoaclassics.com/shop.htm
I’ll set up a table with a couple large hot “coffee” dispensers with water. Then everyone can help themselves to which flavor they would like.
Then I would add the extras throughout the table. They have a lot of adorable ideas for marshmallows and candy canes out on the internet right now.

I am biased because I am doing a Cocoa and Cider bar. 🙂 I actually started a post a while ago and got some GREAT suggestions about toppings. The only thing I might say is are you having other drink options? I have several lactose intolerant/chocolate allergies so that is why the cider option.
Here is that post with some topping suggestions:

I think if you have some sort of “cake” with a topper on it no one will miss a traditional wedding cake! I think the cocoa is an awesome idea and I wish I had some right now.

I think hot cocoa is a great idea! Usually I’m way full at cake time anyway (although… I still eat it. 😉 ).

If you can’t have both, go for the cocoa bar. No one will miss the cake if you decide to skip it to serve another dessert. Almost everyone loves cheesecake so you can’t go wrong there.
