Search online.. your last name may already have one established if it is a common European name (wasn’t sure if you’ve already explored this route).

If neither of your surnames has a family crest, maybe you can select symbols that represent qualities or characteristics that reflect you and your Fiance.  Everything from the shape of the shield to the background color/pattern and symbols within it has a meaning.  You can learn more about heraldic symbolism here.
