Make sure to bring comfortable shoes to talk in and a jacket or blanked to wrap up in between poses.  It really just comes down to your photographer and there level of experience. He should be able to guide you in what you need since he is the one executing it. Good luck!

I think if you have a couple of amazing locations, that is a good start.  Or perhaps do something that aligns with your personality.  I first thought about doing one at the beach with my hubby since our first couple of dates were at the beach (and we still might) but now we are planning to do one when we go home to visit his family for Christmas in Iowa.  As long as the weather cooperates, we were going to stage some TTD sessions with hunting stuff or farm equipment…so a bit of an homage to his midwestern roots.  He loves the idea so it helped him be more involved too.
