I would just keep them in water the entire time. So let them soak to swell at 9am like you said you would, and then when you make the vases put a couple inches (or more) of water at the bottom. The top ones should stay swollen that way.

Btw now I have to get these for my wedding.

ETA: At the end of the video they say you can refrigerate them after they are swollen to keep them ready. So why don’t you prep them the day before, and put them in a refridgerator or in a cooler with some ice. Then when you set up your centerpieces at 9am on saturday they should still be completely swollen.

I made mines up the night before and let them swell over night, then put a bit of water in the bottom once I put them in the vases. They lasted all day and night, and were still full and lovely the day after the wedding when we went to collect them! Great things!
