I did a cocktail party for work recently and they calculated 9 pieces per person.  It seemed like a lot to me…and then we ran out of food, but that’s because we were doing a cocktail party and people stayed and thought it was ‘dinner’.

Started at 6pm.  So if yours is at like 2pm, you’ll be fine with a normal count.  But as your start inching toward 5, you’ll want to add more.  And people love meat, so while this will be the most expensive, you’ll probably run out (bacon wrapped anything, meatballs, etc) if you don’t plan carefully.  Load up on cheeses, this has a tendency to fill folks up.  Lastly, if you make a really bomb dip and you have, like, pita bread with it, folks will fill up on that too.  That way you don’t run out of whatever heavier foods you’re supplying. Oh and don’t pay for someone else to make shrimp cocktail.  They will significantly overcharge you since it’s ridic cheap at costco and they won’t be adding anything significant to the dish.

Crap, now I’m starving.

@WillyNilly:  lol, you had me at dip and pita bread… I got hungry after reading what you wrote!  The best appetizer I ever saw on a menu was mini beef wellington.  Way beyond our budget!!  We’re trying to figure out a cost effective app reception as well.
