I am trying to figure out how many hors d’oeuvres to provide and what to budget for the one hour cocktail hour for 75 guests.
I have read that hors d’oeuvres served before a a full dinner meal 3-4 pieces is appropriate and before a light dinner meal 5-7 pieces is appropriate. This sounds reasonable to me as I don’t like with there are too many hors d’oeuvres before a sit down meal because no one will eat the meal. Even if our meal is “full” I would tend towards providing 5 passed hors d’oeurves or 4 passed hors d’oeuvres and a display just to be safe.
So that would be 5 pieces for 75 people totalling 375 pieces.
But how many options am I supposed to have? I had been thinking a meat option, a chicken option, a vegetarian option, a shellfish option, and a fish option.
So do I provide 75 of each option? What if someone decides that they want five crab cakes?
