This year I have planned: 

  • gingerbread (never made before)
  • an apple pie themed cheesecake
  • sugar cookie cut-outs
  • fudge
  • cashew brittle
  • red velvet crinkle cookies

I want to make cookies, but I don’t have a mixer yet, and I can’t afford the beloved KitchenAid yet. I do want to make something though.

@Fall_In_Love22:  Fudge does require a mixer, brittle/toffee doesn’t require one, also rice krispie treats, popcorn balls, and chocolate coated pretzels or candy apples rolled in chop nuts are great options! 🙂

@Fall_In_Love22:  I made 4 or 5 types of cookies last year without a stand mixer.  Many cookies can be mixed by hand without much difficulty.  This will be my first Christmas with my KitchenAid, but I’ve been baking Christmas cookies for years.

@LadyBear:  I guess I need to look around for new cookies, the ones that we usually have all require a stand mixer.

I always make Italian “S” cookies, so I will be doing that this Christmas. I am also planning on making cinnamon rolls — we’ll see how that turns out.

I’ve been bitten by the baking bug already, really hard!  Made 3 kinds of cookies last weekend, and an apple cake, and then made homemade Cranberry Bliss Bars.  I don’t have a stand mixer, but I do have a hand mixer, so I just adapt and use that.  And when I didn’t have that, my arms got a workout!  

For Christmas I have been nominated to make my “famous” salted chocolate chip cookies, and scotcheroos.  And I plan to bake lemon bread (or pumpkin bread, but I like lemon bread better…) to give to the neighbors.  And some chocolate chip cookies with heath pieces in one batch, peppermint bark in another.  And probably several other kinds of cookies.

I think I have a baking addiction – I sit at work all day thinking about what I want to bake, and then go home and bake something or other…

We make buckeyes and little loaves of sweet breads for the extended families. I would like to make some cookies for our enjoyment as well but not sure if I will have time.

Fiance and I have made cutouts for the past 3 years. We’ll I’ve always made them, he just helps frost. I just don’t think I have the time this year.

He asked about it last night though and sounded so disappointed when I told him that. So now I might have to.

I’d like to start up that tradition with Fiance if possible. He was thinking of just choco chip cookies for his part, and I’ll be making my chocolate cookies probably with a peppermint flavor.  I was also considering making either fudge or flavored marshmallows as stocking stuffers. Yummy!

My hubby and I have been making gingerbread every year since we started dating in 2004.  I just made my first “from scratch” batch of sugar cookies and they were delicious!

I am making Black Forest Mini Cheesecakes and Cracker Brickle for tomorrow’s dept. party. I will be making lots of cookies after finals are over!
