I believe each bottle typically contains around 750mL (25 oz) which should fill about 5glasses with 5oz of champagne.  So if everyone had 5 oz, 2 cases would serve about 120 people.

The guideline I got from our caterer was 1 bottle/8 guests.  We had about 70 guests and had one case of champagne and did not have any leftovers.  Our champagne was also incredibly delicious and alot of people had more than one glass.

it’s assumed if you’re having just champagne toast that you’ll just half a serving per glass.

What most people don’t realize (or care) is that when the champagne flutes are pre-filled, 99% of it goes to waste. Many folks don’t like champagne of any kind but they take a glass out of courtesy, take an obligatory sip during the toast and then leave the rest behind untouched. Your best option is to have it available at the bar and only serve it to those who specifically request it. During the toasts, if any, let guests drink whatever they prefer, be it beer, soda, etc.
