I have the food freezing bug, bad. I’m determined not to resort to takeout pizza and Thai food after the baby comes. We have a freezer that is as big as most fridges and organized all the food I’ve made earlier…we have an entire drawer is full of food, and there’s more going in tonight.
So far I have put away:
Chicken white-bean chili
Chicken enchilada meat mix
Beef enchilada meat mix
Vietnamese chicken curry
Chicken tagine with olives
Cauliflower parsnip soup
Peach crumble
Beef stroganof
Beef barley stew
Beef & pork ragout (that was DH’s contribution)
and DH is making a double batch of his amazing potato leek soup. It’s a little hard not to eat some of this now, it all looks so good. But, after having watched my friend just have her baby and how she had no time or energy to cook, I am steeling my resolve to keep packing away food so we can just toss it in the microwave and defrost a healthy, tasty meal.
Have any of you bees put away some tasty meals? I’d love to get ideas of things you’ve found that freeze well

I do baked oatmeal for breakfasts. Gimme a sec I’ll get the recipe. They freeze awesome.

Those all sound tastey, I have to figure out some recipies that I can make a freeze soon myself.

I hzve been making double of most dinners and throwing half in the freezer. Quiche, fajitas, chili, stuffed shells.
I have found a couple good websites on Pinterest.
menus4moms.com- is a good one and they have some good potato ideas!

Some standards I make for the freezer
asian meatballs
a variety of stuffed burgers (brie and cranberry sauce, roasted red pepper and blue cheese)
This is really tasty! Moroccan Stuffed Acorn Squash ( omitted the quinoa and added a lot of carmelized onion)

@ThreeMeers: Cool, that acorn squash would be a great one to make the filling ahead and then just toss the squash in to cook the day you want to eat them. I’ve had good luck doing squash in the microwave too, I put them in a glass dish covered with plastic wrap and cook it for about ten minutes – time saver, woohoo!

Lasagna always reheats nice! I am looking forward to hearing what other people say as I am due in 3.5 weeks! My Fiance has 3 kids in elementary school and I do not think I am going to be up to making a dinner for 5 everynight!

Great idea, and I love the variety. However, I will give you this piece of advice, only because nobody mentioned it to me and I had to learn the hard way. A lot of the food I see that you have prepared has a healthy kick of spice, or has beans or cruciferous veg in it. Depending on your own tolerance of these things, IF you are choosing to breastfeed you will notice that the spices and gas will affect your milk. The first night after my son was born, I ate a couple of broccoli florets and then couldn’t figure out why he wouldn’t settle… a nurse told me that the gas from the broccoli probably crossed over into my milk and consequently, gassy milk makes babies unhappy. Just a friend;y piece of advice!

@anothersmith: Wow, I hadn’t thought of that at all! Looks like I need to put some more meats and pasta away! Cucumbers always get to me, now I’ll make sure to avoid them for a while

@anothersmith: I’ve heard that one, it seems like the hospitals in my area (Seattle) are all really good about reminding ladies to have those handy!
