Last week, I ate the most amazing burrito which was stuffed with spicy chicken, avocado, cheese, and..black beans with rice. It was so. delicious. I guess you could say that the rice was wet, in that each grain was well separated rather than being all stuck together, and the beans were very tender.
Mexican food is not huge in Sydney (neither is Southern-style food) so I am reaching out to the bees to see if anyone has a good recipe for black beans and rice.
Actually, I just love rice and beans, so I’ll take anything you can give me!

Mmmn beans and rice 🙂
I use a rice cooker because I am lazy and it makes perfect rice each time. Perhaps though the key is to use salted water for the cooking.
Now to see if black beans come in a can here… thanks bees!

I use black beans from a can. Throw them on the stove and sprinkle some garlic salt and cumin to taste.
Take regular white rice, toss it in a sauce pan with minced onion. Sautee it until lightly golden. Add water according to the package instructions (usually 1 part rice, 2 parts water). If you want “red” rice substitute chicken broth for water and add about a table spoon of tomato paste.

@so_said_ellie: I salt the water in our rice cooker too 🙂
I was assuming you didn’t have a rice cooker, hahaha.

I make my black beans in the crock pot. This isn’t the recipe I use but similar (mine doesn’t call for tomatoes) and sounds yummy. For rice I just use the kind you cook on the stove for 20 minutes and put a little less water than it calls for because otherwise it is too runny.
