Appoint someone to be in charge! At my friend’s wedding, i was the one rounding people up for pictures and making sure guests didn’t stray too far. I had a copy of the picture list and had people lined up ready to go for the next picture, and then the next group “on deck”.  I also got help from the bride’s sister to help identify certain groups of people if I didnt know them. The most important thing is to get someone who isn’t afraid to be a little mean. I had to say, put your damn food down so we can get this stupid picture done more than once. And this person can make sure that other people with cameras don’t interfere (this one’s easy, have the photographer announce during the beginning of guest photos that other cameras will interfere in his/her picture taking abilities and that all professional shots will be made available to guests). I looked like the bad guy a few times as I was yelling at people who were trying to get away, but the bride got her ridiculously extensive list of shots in a relatively small amount of time. And the photographer was beyond grateful to have an assistant.

This is a question for your photographer, how he/she handles formal photos may be very different. The simple answer to your question is that the less structured this time is, the more chaotic it will be.  Guests taking photos over the shoulder of the photographer, coming up with groupings on the fly?  Hope you like standing in one place for awhile because you will be there forever if you don’t take control of the situation.
