My Fiance and I also have The World’s Healthiest Foods, which is good if you want to know how to cook veggies in the healthiest way and know all of the health benefits from them: http://www.amazon.com/Worlds-Healthiest-Foods-Essential-Eating/dp/0976918544/ref=sr_1_1?s=books&ie=UTF8&qid=1337136269&sr=1-1

Hope these help 🙂  I’ve been a vegetarian for 11.5 years!

Good for you! I was a vegetarian for 6 or 7 years as a teenager but began eating chicken and seafood again in moderation. We still cook vegetarian about 85% of our meals, and part of the trick is definitely finding new things to eat to break the routine of salads, lentils and stir fries.

I very strongly recommend The Moosewood Cookbook! And any of her other cookbooks. My mum and I have been cooking out of the original one since I was a baby. Which reminds me that she owes me a copy 😉 I really can’t say enough good things about them – the recipes are clear, use delicious and healthy ingredients, and are crowd pleasers, which can sometimes be difficult with vegetarian cooking.
