We put corn in everything! Some of our favorites:

Macaroni and cheese with corn

Mexican night with corn (black beans, rice, chicken, salsa)

raw corn on salads

I have a corn casserole recipe that my Grandma used to make all the time. I haven’t been able to make since she passed away but you are welcome to the recipe.

I make a large batch though when I make it.

2 cans whole kernel corn- do not drain

2 cans creamed corn

3 cups uncooked elbow macaroni

3 tbsp margerine or butter Grandma called it Oleo

velveeta cheese. I use about 8 slices- we like it cheesy

Mix all together and bake at 350 for about 60 minutes or until macaroni is tender.

Corn Casserole
Sweet Corn Cake
Corn Chowder

and then you can always have corn as a side YUM! or throw it in with some normal meal you make, lasagna, soup, stew, tacos, mashed potatoes, salsa, spaghetti 🙂

I love frying potatoes and onions together and adding creamed corn. It makes a delicious and very easy side dish.

Shepherds pie

Mexican shepherds pie (layer taco meat, corn, salsa, and top with cornbread.  Add other ingredients as desired, like jalapenos)
