Throw away all irrelevant ingredients and feast on bacon?

Seriously though, I have never heard of brined chicken breasts, so not sure what to tell you. If they were fresh I would have pan fried the bacon and onion, mixed it with the goat cheese and then stuffed the breasts. I would then have pan fried the breasts and finished them in the oven.

Wrap the onion and bacon around the chicken and broil, add some bbq sauce and the goat cheese and broil still, until the cheese is browned. Dig in! What time is dinner? I’m on my way 🙂

Cook the chicken and crumble the bacon once cooked, sautée the meats with the onion and maybe serve over pasta with a homemade Alfredo or cream sauce? I don’t cook with goat cheese maybe someone more creative can think of something with that too 🙂

I’d stuff them with the goat cheese, onions, and (cooked) bacon.

Do you have any deli meats? Butterfly the chicken, stuff with cheese (and deli meat) then close, wrap with bacon and cook on the stovetop, turning to get the bacon crispy all the way around

Saute chopped onions, and cook and crumble the bacon. Mix cooled bacon, onions and goat cheese.

Make a slit in the chichen breasts, stuff with cheese mixture. Use toothpick to hold pocket closed.

Saute chicken breasts on both sides till lightly browned then bake off in the oven,

Goat cheese…Gross! I’d dispose of that abomination first and foremost. Then make a grilled or fried chicken carbonara, if you have any sort of pasta on hand.

If the the goat cheese must be included I’d make a mixture of cheese, onion, and what ever herbs or vegetables you have on hand. Butterfly the chicken, stuff it with the mixture, wrap the bacon around the chicken breast and stick it in the oven.

Do you have any filo pastry in the freezer? I would wrap the lot up, stick it in the oven, and have a chicken/bacon/cheese/onion parcel 🙂

I would make a  warm spinach salad.

Cook the bacon, set aside and crumble when cooled.

Use the bacon fat to make a dressing with red wine vinegar, a little sugar, black pepper.

Put spinach in a large bowl with thin sliced onion, diced cooked chicken, crumbled bacon, any other salad things your like (bell pepper, cherry tomato, chopped hard boiled egg, etc.) and then toss with the warm bacon fat dressing. Top with crumbled goat cheese.

I would stuff the chicken breasts with the cheese, bacon, and chopped onion. Close with toothpicks. Bake. If you have some heavy cream, pour some of that the last 5 or so minutes of cooking

Make lardons out of some of the bacon.  Saute with onions.  Cool slightly and mix with the goat cheese.  Put in butterflied chicken breasts.  Wrap bacon around them and bake until done.

Chicken tacos… cook the bacon, sautee the onion, cook and shred the chicken. place in some heated taco shells cover with the goat cheese, a little avacado and Pico and devour.
