Mines pretty easy…

I cut up cherry tomatos, chop up some garlic and basil put it together in a bowl with some olive oil and balsamic vinegar. Toast up some crusty bread for a couple mins and then put the topping on the bread with some parm cheese and put it back in the oven until the cheese has melted

Yep, that was going to be mine, perfect recipe. I let it sit for an hour in the fridge to blend flavors. Brush the bread with olive oil and toast first before putting on the topping, I also melt mozz cheese on the toasted bread, then add topping and sprinkle a little fresh basil. Yum!

@linz09: Yep. I’d only add, brush the thin slices of french bread with olice oil before putting them under the broiler of your oven (3+ minutes check it so it doesn’t burn).

Another variation:

roma tomatoes, chopped

olive oil

basil, chopped

shallots, minced

balsamic vinegar

fresh mozzarella, cubed into little cubes, about 1/4 inch

mix the above.

slice up a baguette and toast pieces in a oven. serve toasted bread alongside mixture. I have picky people in my family, and some people like to control how much or how little “stuff” is on their bread.

woops, you are right. totally forgot about the chilling!

melting some cheese before hand sounds like a delicious idea!
