I love cooking and good food, however, in MY opinion; when you’re on a diet the less you cook the easier it is. to me the key is what I call “grilled+green”.

simple animal protein: steak, grilled/steamed/broiled fish, a lean burger, some turkey, sauteed shrimp

green: green salad, broccoli, green beans, asparagus

it makes you think less of food and look at it more like fuel, but it tastes good

as soon as I start making more elaborate foods my diet ENDS, cause I start with a little bit of oil here, then this, then that, and it ends up not being that diet friendly even if it is healthy

Pinterest has been an amazing resource for me. I do South Beach, so I can just search South Beach Phase 1 and get a ton of hits. One of my FI’s favorite recipes is from there.

I love cookinglight.com and eatingwell.com – makes dinner so easy!  Calorie counts and serving sizes all right there, too.  I pack up one serving for the next day for lunch so lunch is easy too.

I will just tell you when it comes to healthy eating spices are going to be your best friend. We will cook our chicken in a pan with some low sodium chicken broth and load it with spices like cumin, cayenne pepper, crushed red pepper flakes, onion powder, garlic (fresh preferably), and things like Pampered Chef rubs and spices.

You can do the same with veggies on the stove. We do snap or snow peas and brocolli in a pan with garlic and pepper and it is delicious.

I would alos check out Stuffed Green Peppers. They are to die for and filling.

-Avoid vegetable oil and use olive oil in its place. When doing meats, use chicken or beef broth

-Portion your food, whether you want to go so far as to weigh or measure your food or if it is as simple as putting it on your plate and eating just that.

-Spices not sauces. Most sauces have a lot of sodium and are heavier.

I can honestly say I have learned a LOT about healthy cooking. I joined My Fitness Pal and in 2 months have lost 14 pounds just by eating better. Even if you don’t want to join the website for weight loss motivation at least join for the recipes in the forum. They are awesome.
