Breakfast pizza!

Scrambled eggs, veggies, hash-browns, bacon, sausage, ,hot sauce- whatever combination of ingreedients you prefer. and if you vegan or vegetarian you could use substitutes etc

Fiance and I make pizza most Sunday nights. It’s just kind of our ‘thing’. We buy pre-made crusts most of the time, and the one place we get dough from makes the dough with beer. It’s actually really good. I did a quick google search and there are a ton of recipes out there for beer pizza crust, so that would be my suggestion…

MMMM – we make a pizza at least once/week.  I normally grab the Trader Joe’s pizza dough (I like the wheat) but Pioneer Woman’s pizza dough is also really good and super easy to make if I could just remember to do it the night before.  Some of my favorite pizzas are:  Pioneer Woman’s Potato Leek pizza, Annies-Eats Spinoccoli pizza, and SmittenKitchen’s Shaved Asparagus pizza.  But most of the time we just wing it with either tomato or pesto sauce, whatever veggies we’ve got in the fridge, and some combination of cheeses (mozzarella, feta, goat cheese are all great on pizza).

I have the BEST healthy recipe for pizza dough!!  I love making pizzas too, and in order to make me feel better about what I was eating, this recipe is terrific! Not to mention, it is super easy and fast to make!

1 cup all-purpose flour

1/2 cup whole wheat flour

2 tbsp ground flax seed

1 pkg (8 g) quick rising yeast

1/2 tsp salt

2/3 cup very warm water

2 tsp olive oil

2 tsp liquid honey

1 tbsp cornmeal

In a medium bowl, combine both flours, flax meal, yeast and salt. Mix well. Measure warm water in measuring cup, then stir in olive oil and honey. Pour this mixture over dry ingredients and mix using a wooden spoon to form a ball. Turn dough onto a lightly floured surface. Knead for 2 minutes. Spray another medium bolw with olive oil spray and place dough inside. Cover with plastic wrap. Let rise in a warm place until double in size, about 20 minutes. Meanwhile, spray a 12-inch pizza pan with olive oil spray and dust with cornmeal.When dough has risen, turn out onto a lightly floured surface and, using a rolling pin, roll dough into a 12-inch circle. Transfer dough to prepared pizza pan. You can top it with toppings at this point and bake in a 425 oven for 15 minutes.

I love tuna on my pizza, with red onions, green olives, peppers and mozza. Actually I love any kind of seafood on my pizza; ultimate favorite is shrimp, scallops and lobster with alfredo sauce instead of tomato sauce with all of the usual peppers mushrooms and onions, top it off with mozza cheese and it is super yummy.

One that I had recommended to me which I havent had a chance to try yet is using Cranberry sauce as your base and topping it will roast chicken, spanish onion, mushrooms, sliced brie and mozzerella to finish.

Garlic butter/oil mix sauce, mozz, asiago, prov, spinach, broccoli and tomatoes….. white pizza. YUM!!!!

The best pizza I ever made was pesto, leftover shredded chicken, mushrooms, red onion, parmesan, mozzarella and little dollops of red sauce over the top. So yummy!

FH’s favorite to order at the pizza place up the street is ranch, chicken, bacon, red onion, and he adds jalapenos. My favorite to order has marinated artichoke hearts, spinach, pine nuts, roasted red peppers, mozzarella, and capers on olive oil.

We add avocado on top when it comes out of the oven – amazing! We learned that trick in Australia.

You can also put arugula on top once it’s out of the oven – adds a bit of crunch and freshness, so yummy!
