So we are having Mexican Food themed cuisine for our wedding and the caterer we hired has some ideas on what could be served during cocktail hour but im not fond of the suggestions she has. Its still a while a way but would love some suggestions, on what to serve during cocktail hour.

Do you want to stick with the Mexican menu or go with something else entirely? Ask your caterer for a full menu of what they are able to fix. Also, browsing catering menus online under the appetizer sections is a good place to look for ideas, but finalize your ideas with your caterer and make sure they are able to do what you want.

I would probably do something light like fresh fruit & crudites because I always eat a LOT of food (and carbs) when I’m eating Mexican 🙂
I also think you could do a cheese platter, chips & fresh guacamole/salsa, shrimp cocktail, mini enchilladas…lots of things would fit!

Mini Tacos, Quesadillas, Cherry Tomatoes stuffed with Corn and Cilantro and topped with Queso Fresco, Ceviche, Chicken Skewers with Tequila Lime Marinade, Shrimp with Mango Salsa, Guacamole or Black Bean Dip served in mini cups with one large tortilla chip sticking out….

@les105: You are exactly right Mexican Food=Carbs so I want to try and stick with the mexican theme but nothing where you will leave my wedding with 3lbs added on. So I think I will talk to her about the fruit trays for sure.
@Ms. Blue: The cherry tomatoes are a great idea, and so is the ceviche!!! LOVE ceviche!!
@Ember78: Thank you I will definitely ask for a list. She mentioned to me like mini slider hamburgers, mini corndogs, and like bacon wrapped jalapeno things. To me the sliders and corndogs are kids menu things.

@Ms. Blue: I second all of these ideas – they’re in keeping with your theme, but since Mexican food is generally really heavy it’s good to go with lighter apps so people will still be hungry for dinner.

I think Sangria would be a great specialty beverage to serve.
For food I think you could spice up some common foods. If you do shrimp cocktail you could spice up the dipping sauce or do a salsa based one instead and have some lime wedges on the side.
Stuffed mushrooms could be done with some added taco seasoning topped with some cheddar.
I would probably do some kind of little pulled pork sliders, though I would probably do it on ciabatta or foccacia or some other less common bread (though it’s not Mexican).

@nickels: I am doing red and white sangrias as specialty drinks and also having Patron margs for the men. Not very many guys we know like sangria but love margs.
