hmm… Food tastings are something I did way back in like May…it shouldn’t be about what they want. Give them dates that are good for you and if they can’t comply drop ’em!

My venue told me 6 months but then they said its better to wait until closer because menus can change and you want to taste the most recent.

Something that I realized during wedding planning- as a bride, your wedding is probably one of the most important things in your life at the time.  I found myself freaking out when someone wouldn’t call me back after a few days (although sometimes it was longer than that which I still maintain was bad business!).  Truthfully, your vendors do not have time to think about YOUR wedding 24/7 like you do, especially when they have a ton of other weddings to deal with before yours.  (I did learn that as it got closer to our wedding date, they kicked things into high gear and got everything figured out very quickly).  If it’s a venue with a great reputation, I’d try to trust them that everything will get done and it will be great.  It doesn’t hurt to push a little in a nice way, however, especially if your need to have the menu nailed down affects other aspects of the wedding (like dinner choices on invites, etc.).  You need to stick up for yourself and your wedding, but realize that your timeline may be different than your vendors timeline.  I know it’s hard, but try not to freak out on them- chances are they’ve got it under control.
