Do tehy have to be from New York?  Florists can get in season flowers from ANYWHERE.  We got married last september and had Hydrangea, some ranunculus (out of season, but managed to get some) delphiniums, and spray roses,  There is a good took here http://www.blissweddings.com/weddingfloral/ that allows you to search availability based on location and season.

We are doing ours ourselves and ordering them from fiftyflowers.com. They have amazing prices and most all the flowers can be shipped to us in September. You should check it out!

As a florist I can say that all flowers can be “in season” for the right price. If you are looking to save a little: stick to common flowers like hydrangeas, callas, fressia, and roses.
