This is easy, delicious, and looks so elegant!

Almost-Instant Chocolate Mousse

8 oz. bittersweet or semisweet chocolate, coarsely chopped

1 ½ c. heavy cream

1 tsp. vanilla extract

In the top of a double boiler over barely simmering water, melt the chocolate, stirring occasionally until smooth. Remove from the heat and let cool slightly, just until tepid.

Meanwhile, in a large bowl, combine the cream and vanilla and beat with an electric mixer until soft peaks form. Using a large rubber spatula, fold in the chocolate.

Transfer to a serving bowl. Cover with plastic wrap and refrigerate at least 30 minutes before serving.

To dress it up, serve in individual glass dishes and garnish with dollops of sweetened whipped cream and whole raspberries. Other garnishes include a strip or two of candied citrus zest, chopped nuts, other crushed candies (peppermints, lemon drops), mint sprigs, crystallized violets, or an edible flower blossom.

Try searching for ‘ramekin desserts’. They make great individual size portions and there are a million options!
