I would definitely have grilled veggies, maybe even grilled veggie skewers for easier serving.  Since it will be late summer, maybe also some grilled corn?  You could have grilled flatbread pizzas cut into triangles for the appetizers.

You should come up with categories and then choose recipes based on the equipment you have access to. Like decide how many entrees/sides you need for the amount of people and style of wedding, and go from there. So for example, London broil is good, but for the nonmeat eaters you’ll want to have a chicken or fish or vegetable entree, so maybe choose a roasted chicken recipe that will allow you to use the electric roasters you have. The crockpot is great for slow cooked meats, or even mashed potatoes if you want to use it for sides.

To maximize your equipment I’d also consider appetizers that don’t require cooking- a cheese table, antipasto, crudites and dip, salad. Same goes for dessert! Get that all baked up in advance. Or catered!
