Okay, so I’m Japanese and my fiance is Mexican and we really wanted to show our cultures through our wedding food.
So we originally wanted to do sushi for cocktail hour and tacos for dinner, a little more authentic to our culture, but neither caterer that provides this has full staff that can do a champagne toast, cake cutting, provide tableware/glassware/linens. How would you go about this?
We’re almost thinking of just hiring a caterer that can do ALL this- cake cutting, champagne toast, etc…. to avoid dealing with so many vendors since I’m not having a coordinator. We’ll have to nix the sushi for cocktail hour and maybe just do an Asian themed cocktail hour and Mexican dinner- and it won’t be nearly as authentic. What would you do?

Would the caterer be willing to work with pre-made sushi?

Our caterer outsourced the sushi from a Japenese restaurant, but we still only had to deal with one vendor since they handled everything.

You can have a second caterer do the sushi just of the cocktail hour and then a full service caterer for the dinner.

Thanks for all the suggestions! I’ll bring it up with my Fiance. We’re also on a pretty tight budget (who isn’t, right?)

@DaisyCakes: Adding sushi to our cocktail hour cost an extra $5pp I believe. Unfortunately it was long gone by the time we joined (after photos) about 20minutes in. Guests loved it, but I wish I’d gotten a commitment from the caterer on how many pieces per person they would provide at that price because it just wasn’t enough IMO.
