Welcome to weddingbee!  I don’t have any advice to make that stuff more fun but I’m sure you can figure out a way to make it work!  I would try and get a venue set up soon because that is going to determine how many people you can actually invite or afford to invite food wise.

I believe you would put Doctors Jane and John Smith.  This website has a nice list of how to address envelopes.

This site was a LIFESAVER to me for addressing our 175 invitations!  Also a good tip: take a notecard, draw evenly space lines on it with a sharpie (1/4-1/2 inch), and when you are ready to address the invites place the card inside the envelope.  The sharpie lines should show through and allow you to address with ease!
