I’ve done some googling but I can’t really find a good way to put this all together. I’m paying for most of the wedding myself but I feel weird not listing our parents’ names at all. Where it gets confusing is that my parents were divorced and my dad recently passed away. If I were to put “daughter of _____ and the late _____” under my name, do my parents names need to be on different lines since they were divorced? Or is that only necessary for divorced parents who are both hosts?

I didn’t put any parents names (even though there were contributions and not from all parties).
IF I would have I would have put: (and both sets of parents are divorced)
John and Jane Doe
Brian and Kim Deeds

I would put
“Daughter of Mrs Sally Smith and the late Mr John Smith” Using the first name of the lady implies that they were divorced otherwise it would be Mr and Mrs John Smith if your father was still with us. Or Mrs John Smith and the late Mr John Smith if she was widowed.
Another example (so hopefully this is clear) SO’s mother is twice divorced but uses the name from her second marriage. She is known as Mrs Betty Jones (not her real name) if I called her Mrs Leonard Jones it would imply she was married to a man called Leonard.
Hope that helps
