Sounds like a great menu. I went to a wedding that served fried-chicken, and it was my favorite wedding meal yet. We just used napkins to wipe our hands, and you could also provide wet wipes. I agree about only having one pasta. Try to find a good gluten-free meal for your one guest; maybe you could even just get it from a totally different restaurant.

I agree with doing corn off-the-cob, I hate having to get messy at a wedding when I’m wearing a nice dress.
Mac & cheese and pasta salad is too much pasta. I’d do a potato dish (mashed, grilled, anything)
Now, I hope you have no gluten free friends – it sounds like all they’ll be able to eat are the green beans and salad!
