So, Fiance and I have a minimum per person we have to meet with our caterer, so we are going all out, but we are afraid we are going to overload our guests! Would this be too much food?

Oh yeah, I wouldn’t worry about that. People will be in a better mood if they are full as compared to still being hungry and no one likes to leave a wedding or party still hungry. Congrats and have fun!!!

Sounds perfectly balanced to me, like pp said, better to have guests with full happy tummies than being left hungry.
