I think 30 minutes each or together would be best.  30 minutes passes pretty fast for some reason on a jet ski, so 15 minutes each with swapping would definitely be too short.   How important is it for you to try it out?  If its a b-day gift for him and you’re right on cash, maybe just a 30 minute one where you ride behind him?

My now Fiance and I did a 30 min jetski once, and I think 30 mins was enough.

A few things though: this might not happen to you because it’s a groupon, but when we went it was advertised as something like $60 for 30 mins. When we got there, on top of the $60, we had to pay a $5 gas fee, a $3 lifevest fee, a $5 insurance fee, etc. etc. They nickle and dimed us to DEATH! But we were there, and we figured we might as well pay it. When I looked back at the ad there was no asterisk or anything denoting extra fees, so just be prepared for that…

Also I highly recommend bringing goggles or a snorkel mask. The jetski whips a ton of water into the air, and with the wind, it makes seeing really difficult (and the salt stings a lot!)

It was really fun though!

My Fiance has a jetski & I just love it! So I might be a little biased, but I’d say that doing one hour would be better. That way you can each have 30 mins driving. Thirty minutes can go by pretty fast, so only fifteen minutes each just doesn’t sound like enough to me. But when I go jetskiing, we usually go all day, so my opinion might be a bit biased. Either way, you’ll have lots of fun!
