well im vegetarian and i think my favorite dish would have to be eggplant parmesean.

alfredo with broccoli, spaghetti salad, vegetable lasanga, cheese ravioli, mexican bean dip, vegetarian tacos, veggie burgers, tomato bruchetta, apple walnut salad, mozarella and tomato paninis, spinach omelet, baked ziti, and cheddar brocolli soup are all favorites of mine. 

 also you can make just about anything with meat subsitutes.

Ooh, the paninis sound good! Served with a cold creamy avocado soup or a cold tomato soup, that would be awesome!

Something we ate last night at an amazing anniversary dinner: Fried goat cheese salad. They made like a goat cheese ball, breaded it with bread crumbs and deep fried, then put it on top of an arugula salad!

Another thought: falafel sandwiches if it’s a lighter lunch… i saw a great recipe in… ummm… I think it was country living? or coastal living? ahhh wish i could remember which! If i do remember, i’ll come back and add it on here πŸ™‚

You could skirt the entree issue by focusing on some heartier salads, like broccoli salad or garbonzo bean salad. If you really want an entree, I second the panini motion. Parasean eggplant is great, but you’d have to frett about keeping it hot.

Know how we solved this problem? We found the right caterer! We gave our caterer an outline of the kind of reception we want and then said we wanted good food to go with it. She threw out tons of delicious ideas! We’re getting 3 different salads, fruit, veggie, and antipesto trays, mashed potatoes, rolls, 2 veggie sides, and BBQ “ribs” among other things. She also suggested grilled veggie kabobs or grilled portabella mushrooms. I am ever a fan of lasagna or any kind of italian food (almost everything can be made meatless!). Think about your absolute favorite dinner meals and work from there! πŸ™‚
