with a corset back dress (which is what it sounds like you have) it should form a V in the back and not be laced tight all the way down.  The top part where the back fat happens should actually be very loose then pulling in tight at the waist.  Loose the top and it should fix the problem.  I think when I lace mine you can actually fit like 2 fingers in the top.

when you get laced up, have the Bridesmaid or Best Man not tighten the top and only start tightening in the middle and down.  The only problem with mine is that i have big boobs and the top started falling after about 15 mins so we had to tighten it back up and I was afraid of a wardrobe malfunction all night.  If I could do it again I would get some good strong tape to make sure the top is taped on and probably wear a good bra but i think the bra i had purchased would have also create back fat.

It’s not sexy, but you can also have a Bridesmaid or Best Man or someone else loving and close to you that you trust, stick their fingers into the little crevice in your back and literally sweep the flesh out to the sides.
