I’m in the same position as you…. i’ve been lactose intolerant for about 8 years and its slowly gotten worse to the point where i can’t have anything.

By The Way I live on lactaid pills… I call it a “side”. lol

Alfredo sauce i tried something similar and it tasted good but nothing like alfredo sauce.

I will say though If you can find lactaid brand ice cream by you – its amazing! I am so upset that I can’t find it by me. 🙁

I’ve heard about cooking with soy milk instead of lactaid but Fiance might freak… atleast lactaid he can’t taste a difference. lol. I also saw a low fat cheese sauce recipe for like macaroni and cheese that uses fat free chicken broth mixed with milk instead of just milk in the roux (less fatening i guess) but it would also have less lactaid.

I’m super lactose intolerant, i don’t just get a bit of gas like others, I get full blown bowel issues from the tiniest bit of cheese, so i’m always careful when it comes to dairy (it helps that I also try to avoid it for the hormone issues too!).

I use Lactase if i can’t avoid dairy but:

1. Almond milk (unsweetened) is the best dairy substitute IMO. I use it for making oatmeal, cakes, mashed potatoes, etc. I prefer it over soy because SOY also has a hormone issue.

For breakfast there’s nothing better than:

2/3 cup almond milk, 1/3 cup instant oats, 2 tsp chia seeds, 1 frozen banana, a little squirt of honey or agave nectar and a scoop of protein powder (optional). Mix and nuke 🙂 Awesome!

For brekkie/Lunch you could try the green monster diet:

2 handfuls of baby spinach leaves, 1 banana, handful of ice, 1/2 – 1 cup of almond milk, 1 tbs chia seeds, tsp of flax seed oil. Blend and enjoy! Again, protein powder optional.

For lunch/dinner, my fave is a bean salad:

half cup white navy beans, half a cucumber, a few cherry tomatoes, a little bit of avocado, roughly chopped cilantro, sliced beets, slice black olives and a boiled egg with a balsamic salad dressing. No dairy/creaminess there, but it’s just a kick ass salad!

Fiance is lactose intolerant and I’m desperate to try this recipe where you use soft tofu to make a sort of white alfredo sauce! I don’t remember it off the top of my head but I’m sure could Google it!
