I think the biggest problem is just that it is a lot of work and expense to decorate and bring everything in (all of the rentals, etc.). Definitely quote rental prices before booking a raw space.

Obviously all the factors you mention will vary according to which loft you end up using. We had Real Food Catering cater our wedding at Studio 450 and everything was lovely. I highly recommend both the catering company and the venue. Real Food work at Studio 450 a lot so the owners know and trust them, and they know all the ins and outs of the venue. Yen and Gary at Real Food gave us great advice about how the venue should be set up and decorated, they were really invaluable.
