I’m looking for some input on my menu. We are having a Mediterranean inspired stations menu. Here’s what we have come up with so far:
Variety of cured meats and cheeses, olives, marinated vegetables, etc.
Flatbreads with spreads:
Olive tapenade, hummus, roasted red pepper, baba ganoush (roasted eggplant)
Tossed, with a balsamic vinaigrette
I’m thinking about adding another non-green salad, maybe a quinoa or bean salad?
Pastas: Penne, cheese tortellini
Sauces: Roasted Red Pepper Cream Sauce, Basil Pesto and Traditional Marinara
Toppings: Seasonal Vegetables, Kalamata Olives, Wild Mushroom Medley, Pancetta, Smoked Chicken and Shrimp
Garlic-Herb Chicken Brochettes
Greek Herb-Marinated Lamb Kebabs
Turkish Beef Kebabs
Balsamic-Glazed Vegetable Skewers
Late night table options-
Fresh, hand-cut frites
Gravy (beef, chicken, vegetarian)
Toppings: Scallions, tomatoes, caramelized onions, chillies, asparagus
I was thinking of adding sauteed mushrooms, bacon, and sour cream as additional toppings
Assorted Gourmet Pizzas
Tea and coffee
Is there anything you think I should add, take away, or change?
Should I add some hot h’ors d’oeurves if I can fit it into the budget? Any suggestions?
Should I add the another salad?
Poutine or pizza for the late night table?
