Well, I think the easiest thing to do would be to get a couple large folding tables (the long rectangular kind) and set trays of the sandwiches out, just the meat and cheese on bread.  Then next to those set out the condiments, lettuce, tomato, etc.  Usually, 2-3 types of sandwiches suffice to please people’s different tastes.  Make sure to ask the bistro to make them plain though, because if you have them pre-made with all the veggies and sauces on them, by the time you set them out they’ll be mushy and gross.  Sandwiches with only meat and cheese on bread will keep about 2-3 days in the fridge.

I’d just add, be really smart about delegating how this gets set out. I can see a sandwich tray + wedding dress = disaster if you’re trying to do this AND do all the other day-of things.
