I love making soft tacos with whole wheat wraps.  I use refried beans (low fat and great tasting!) lettuce, tomato, and a small amount of shredded cheese.  You could also do chicken or extra lean ground turkey with taco seasoning if you’re not into the beans.

I also like whole wheat pasta with red sauce and meatballs made from extra lean ground turkey (though you could use 93/7 ground beef).  Mix a handful of bread crumbs and an egg with a lbs of extra lean ground turkey and simmer them in red sauce over low heat for a few hours.  I always use different sauce on the pasta than the sauce the turkey was cooked in, but I know people who just use the same sauce.

Sorry they’re not too creative.  I like boring stuff 🙂

Check out Cooking Light recipes – that’s pretty much all I eat anymore.  You can find them online at myrecipes.com.  You can search by ingredients, menu category, preparation methods, etc. – if you filter the results by publication, then you can see only Cooking Light recipes.

i hear you! here are my favs:

lean turkey sausage and a salad-just buy turkey sausage at store and cook it on stove top (i do not use any oil or anything). my salads vary..i keep a large selection of salad options so i dont get bored. the usualy is iceburg lettuce, ff cheese, lite ranch, cucumbers, almonds, green peppers, red peppers, and orange peppers

stuffed green peppers and cottage cheese-green peppers boiled and then stuffed with lean ground turkey and tomato sauce with ff cheese on top (bake in oven for 15min)

chicken salad-salad with grilled chicken. i change up what is in my salad and chicken spices. i add as many different vegies as possible.

turkey burgers and peppers-turkey burgers cooked on stove tops (no oil or anything) and chopped peppers on the side. I usually dont have buns but if i am really needing some bread i eat arnolds buns (100% whole wheat..yummy)

chicken and beans-chicken strips cooked with salsa, peppers, and black beans (just cook together on the stove top). i then add fat free sour cream. It is so good and so simple!

vegy burgers-frozen vegy burgers with a small salad

Vegy only salad-my fav option if i had a big lunch or splurged that day.

for desert (if needed) i love suger free jello and pudding! yummy!!!!

i prepare it a head oif time and so it is so easy to just reach for that when i need something sweet
