Chili with mushrooms instead of beans and low carb spicy salsa for the tomato component, simple roast chicken, and tuna salad on lettuce.

i just started an attempt at a primal diet about 3 weeks ago. it’s going well, though i did have a krispy kreme today… yikes.

my favorites have been:

-eggplant rollatini w/ meatballs and meat sauce

-stuffed peppers! did mine w/ ground lamb, onion, mushroom, kalamata olives, spinach, sundried tomatoes and feta

-mushroom/onion saute on top of any sort of meat

-spinach salad w/ random veggies and baked chicken

-stir fry of anything w/ soy sauce, lime juice, honey, siracha, sesame oil etc. i’m cheating and using a tiny bit of cornstartch to thicken it up

-tunisian marinated steak- tumeric, lemon, olive oil, onion/shallot, soy sauce/sherry, garlic

 

that’s all i can think about off the top of my head. im a pain in the ass and want sauce/dressing on EVERYTHING i eat, so i’ve gotten creative. my fiance is totally fine eating a plain piece of chicken/pork/beef and some veggies on the side, but that doesn’t fly with me. haha.

To give you a sense of the kinds of things I make for dinner:

-Jambalaya with cauliflower “rice” (I think I got this from the blog “Multiply Delicious”)

-Mussels in Thai curry sauce (if you don’t like mussels you can substitute chicken, beef, pork..)

-Moroccan spiced meatballs with herbed carrot cauliflower puree

-Chicken and veg. fajitas without tortillas

-Blackened steak salad

-Peppers and sausage in red sauce with zucchini “pasta”

Do you like seafood?

I LOVE shrimp sauteed in just a little olive oil and then tossed with a splash of lime juice and cut up cilantro over spinach leaves.  It’s actually REALLY filling and so quick to make.

During the summer I’ll marinate a tuna steak in FF italian dressing for about 3 or 4 hours and then grill it with thick cuts of green peppers and onions on the grill.  Super yummy!

I love health-bent.com & lifeasaplate.com. The second has some recipes that include honey, so they’re not all low carb, but many of them are. Good luck!

@hergreenapples:  i’m following you now 🙂 i’m being so bad with cheese. i’m not fully subscribed to paleo, but i know i should eat as much cheese as i do! looks like you have a lot of good recipes pinned
